Tonight for dinner I made a steak salad for the family. It consisted of rare cooked beef rump steak on top of salad. The salad was made from baby leafs, avocado, tomatoes, red pepper, cucumber and beetroot.
I finished it off with some peri peri mayonnaise from Marks and Spencer. The mayo is very spicy so I only use a small amount.
Its a great meal as its low carb, very quick to make and full of your 5 a day! My kids love it and so did Honey the dog as we saved some steak for her!
- 2 Rump Beef Steaks
- 1 bag of baby leafs
- 1 sweet pointer pepper
- 1 punnet of cherry tomatoes
- 1 cucumber portion
- 1 avocado
- 1 pack of store prepared shredded beetroot
- Peri Peri Mayo
There’s no real set method for this meal. You cook the steak to your desired taste as per pack instructions and thinly slice it into strips. Then prepare and chop your salad. Place your chosen salad items on the plate and add the steak to the top of the salad. Dress with the Peri Peri Mayo or dressing of your choice. Really easy and delicious.
