Just a quick healthy salmon salad meal this evening for the family which was a pan fried Salmon fillet with green salad. The salad was a store bought mixed babyleaf salad with baby plum tomatoes, cucumber, avocado and balsamic vinegar. The Salmon fillet was fried in a little olive oil and seasoned with black pepper.
- 4 salmon fillets
- olive oil
- 1 bag of baby leafs
- 1 punnet of baby plum tomatoes
- 1 cucumber portion
- 1 avocado
- balsamic vinegar
- black pepper
To make the salmon salad pan fry the salmon fillets in a little olive oil and season with black pepper. Whilst the Salmon is cooking prepare the salad by slicing up the tomatoes, cucumber and avocado. Add the salad to the plate and then when the salmon fillet is cooked add that to the side of the plate. Dress the salad with a splash of balsamic vinegar and a drizzle of olive oil.
